Ginger Cookies


Some of the trees here are starting to turn and this morning we saw a few geese, time to bake some cookies that make me think of fall.  This is a recipe that my mom always made and is a favorite of mine. 

Ginger Molasses Cookies
1/4 c. shortening
1 c. brown sugar
5 Tbsp. molasses
1 egg
1 tsp. ginger
1/2 tsp. cloves
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda ~ dissolved in 1 Tbsp. hot water
2 ~ 1/2 c. flour

Preheat oven to 350 degrees.
In a mixing bowl cream together the first 4 ingredients.
                        Add the baking soda to the creamed ingredients.
In another bowl blend together the salt, spices and flour.
Add the flour mixture to the wet ingredients.  Mix until well blended.
Make dough into small round balls (about walnut size) and dip tops into white sugar,  place on greased baking sheets.  Flatten the cookies with a fork.

Bake at 350 for 10 to 12 minutes.
